  • What are char options and tasting notes for new barrels?

    Toasting levels are tailored to client specifications:

    Level 1) Light Roast - vanilla, sweet & tannin notes
    Level 2) Medium Roast - fresh bread, chocolate, vanilla and spice notes
    Level 3) Heavy Roast- caramel, roasted almonds, dark chocolate and coffee notes
    Level 4) Char - ginger, black pepper, coffee and bbq smoke notes

  • How do you char barrels?

    We use wood scraps leftover from cask production to disinfect and burn casks. We do not use sulfur tablets, candles, matchsticks or any other products.

  • Should new barrels be hydrated before use?

    It is important to hydrate new oak barrels before use. We recommend the following:

    1) Fill each barrel with chlorine-free filtered water
    2) Let the wood rehydrate for 24 hours
    3) Check for leakage
    4) Empty the barrel and allow it to drain and dry completely.

  • How is your oak dried?

    We work exclusively with air-dried oak.

  • What oak do you use for the barrels?

    For standard 225L barrels we use the following:

    Sherry - American Oak
    Vino de Naranja - American Oak
    Vermouth - French Oak
    Port - French Oak
    Madeira - French Oak
    Tokaji - French Oak
    Cognac, 270L - French Oak

    We can customize the oak for any of the sherry, vermouth, and vino de naranja (orange wine) barrels.

  • How long do you season casks?

    Refurbished barrels are aged with generous wines for 4-6 months and new barrels for 3-12 months, depending on their size. This length of time is industry standard and is sufficient and optimal to soften any oak tannins and imbue the wood with the distinctive organoleptic profile of each wine.

  • What wines did your refurbished casks hold?

    Our refurbished casks are made from used red or white wine barrels sourced from Spanish and French wineries.

  • What does refurbishing consist of?

    Each repurposed cask is completely disassembled, sanded, repaired (with broken staves replaced), rebuilt and burnt inside. Each barrel takes an hour or so to renovate and is done with meticulous attention to detail entirely by hand.

  • What differentiates barrel quality in wine cask finishes?

    Freshness is a big factor in specialty cask quality. We guarantee barrels that are freshly dumped; that can extract great aromatics and flavor profiles.

  • Do casks dry out during transport?

    We leave several liters of wine in each barrel to ensure casks remain hydrated throughout transport.

  • How do I care for my seasoned cask?

    Keep your cask stored on its side in a cool place out of sunlight. Ensure it remains hydrated to prevent cracks and leaks.

  • Are seasoned casks authentic?

    Essentially all sherry casks used to age spirits are seasoned. Seasoned casks are fairly authentic to the transport casks historically used.

    Casks from a genuine solera criadera system are rare finds, as they are employed for decades within bodegas to age vinos generosos and are also kept within families as heirlooms. They are repaired as needed; seldom sold.

    If you find one on the market, ensure its authenticity.

  • Isn't it a shame to use sherries to season casks?

    We use the second or third pressing of base harvest year Pedro Ximénez wines and/or wines designated for cask seasoning by the Denomination of Origin Consejo Regulador. No wine is wasted in the process. After seasoning casks, wines are sent to local vinegar or alcohol production facilities.

  • What makes for a quality sweet wine?

    All sweet wines are not the same. To differentiate quality within the category of PX, sugar concentration is key. The higher the sugar density, the higher the quality. Our PX has 400+ grams of natural sugars per liter certified by an independent analytical laboratory. We offer formats starting at 20L TetraPaks for those wishing to experiment with smaller volumes.

  • How do I store my wine?

    We recommend storing your wine in a cool (~13°C (50-55°F), dark place for maximum shelf-life. Conditions similar to a wine fridge are ideal.

  • How many barrels fit in a container?

    Quantity estimates for a standard barrel size of 250L:

    20’ FCL ~ 50 barriles (+/-4)
    40’ FCL ~ 90 barriles (+/-6) aprox.

  • What is your minimum order quantity?

    Honing a craft requires experimentation and experience, often in small quantities. If you are a craft brewer, blender, bottler or distiller, we would love to serve you. Our Minimum Order Quantities are as follows:

    Wines - 220 liters
    Available in IBC containers in the following volumes: 225, 690, 800, 1050L. MOQ of 220 liters.

    Barrels - 1 pallet
    32 Liters - 18 per pallet (American pallet)
    64 Liters - 10 per pallet (American pallet)
    128 Liters - 4 per pallet (American pallet)
    225 & 250 Liters - 4 per pallet (special pallet: 140Wx100Lx190H cm / 350kg)
    500 Liters - 1 per pallet (American pallet)

  • Can you organize transport?

    We are happy to organize logistics or we can work with your company of choice. We have experience shipping by ground freight, air, and sea to North America, Asia, and Europe.

  • Can you send me wine samples?

    We can ship wine samples within Europe. Please contact us for details.

  • Are discounts available?

    Prices are adjusted by volume. Quantity discounts are available for FCL 20’ containers and bulk wine orders starting at 1,000 Liters. We also offer a special discount on all orders of any quantity for TRUE SPIRITS partners. Please contact us for details.

  • What are the terms of payment?

    For pallet purchases - prepayment bank transfer.

    For container loads and tailor-made orders: 50% retainer & 50% prior to shipment loading date; prepayment bank transfer or letter of credit.

  • Can I schedule a tour?

    We would love to welcome you for a visit of the winery and cooperage. Tours are scheduled with advance reservation (Monday-Saturday, 9am-7pm). Please contact us for arrangements.
