Char Levels
Char levels are customized to client specifications for new barrels:
Level 1) Light Roast - vanilla, sweet & tannin notes
Level 2) Medium Roast - fresh bread, chocolate, vanilla and spice notes
Level 3) Heavy Roast- caramel, roasted almonds, dark chocolate and coffee notes
Level 4) Char - ginger, black pepper, coffee and bbq smoke notes
Wine Finishing
Craft casks (also new standard-sized casks) can be aged with fortified wine:
